This exceptionally rare wild raw honey is harvested in the deep forests of Ukraine using the traditional tree-hollow beekeeping method.
Instead of living in ordinary modern beehives, the bees build their colonies inside hollows formed in tree trunks or in traditional wooden forest hives.
Far from cities and cultivated fields, the bees forage freely among wildflowers, forest herbs, medicinal plants and flowering trees.
The honey slowly matures inside the hive throughout the summer and is harvested only once near the end of the season. Because only a small quantity can be collected, tree-hollow honey is considered one of the rarest traditional forest honeys.
The flavour is deep, rich and complex. Gentle wildflower sweetness is followed by distinctive notes reminiscent of forest herbs, trees, natural resin and propolis.
Its dense texture and long, aromatic finish create the sensation of tasting the deep forest itself.
